Tibico is an ancient drink for modern times. The Tibico Fermentary is located in the beautiful Wye Valley close to Ross on Wye. It all began in my kitchen in 2016 with a driving passion and labour of love to create a unique plant based probiotic drink for personal health reasons and to share with family and friends. A food process technologist and microbiologist it took over 2 years to design and build our unique process. Although we follow the traditional methods created by our ancestors over thousands of years, Tibico takes 10 days to produce, in a unique slow fermentation process. We focus very much on the experience, the microbiology and science of slow fermentation under strict anaerobic conditions (without air). The result is the generation of billions of beneficial bacteria not available in most other health drinks.
